Grilled Cheese and Tomato 2 Ways

This is one of those meals that never fails. It’s quick, cheap, and made with ingredients most of us already have. You can keep it super simple with fresh tomato slices or turn it into classic grilled cheese and tomato soup.Either way, it works for busy weeknights.

Ingredients

  • 4 slices bread
  • 2–4 slices cheese (cheddar or whatever you have)
  • 2 tablespoons butter
  • 1–2 fresh tomatoes, sliced
  • Salt and pepper
  • Optional: canned tomato soup

Instructions

  1. Heat a skillet over medium heat.
  2. Butter one side of each slice of bread.
  3. Place bread butter side down in the skillet.
  4. Add cheese to one slice, then top with the second slice of bread, butter side up.
  5. Cook until golden brown, then flip and cook the other side until the cheese melts.

For fresh tomato style:

Slice tomatoes, sprinkle with salt and pepper, and serve on the side or add directly inside the sandwich.

For soup style:

Heat tomato soup according to package directions and serve with the grilled cheese for dipping.

You can make it your own! Swap cheeses. Add garlic powder. Use sourdough if you have it. This is one of those meals that bends to whatever is in your kitchen.
